Frankie “THE FREAK” Paul

I will tell you the tale of a man who is a legend, mainly in his own mind, but his growing popularity is that of an active volcano, we are all waiting for it to erupt.  His claim to fame seems to come from lies and wise tales yet many have been there to either witness or be implicated in one of his acts.  His mind wonders a bit and he doesn’t sit still much, or he sits still too much it’s kinda weird to explain.  Either way this man has gone by many names, Stephen, Stephano, The Aquatic Giant, TAL, T, Frankie, SLAM, and the finally the Freak.  He rarely matches his clothes which adds to the oddity of his character.  He may be wearing a black fur with red shorts, or plaid pants with an off-color V-neck.  It doesn’t make sense nor should it.  He is more cartoon character than real human.  Most stories start with, “hey remember that time he did this or did that”.  You all laugh and the new guy says “No Fucking Way.”  You chuckle, shake your head and walk away, he doesn’t know any better.  Recently the Freak added small but new accolades to his growing resume of I can’t believe he is doing that tasks.  He was in an independent short  film, is a professional boxer (March 24th), had a beer named after his alter ego ” The Selfie King of Delaware”,  and now has made it to competitive eater.  The Freak will be participating in Wing Bowl on February 2nd. Relax It’s Sunday

Week 1 of the family vacation has come to an end.  This week was loaded with surprises.  We met some amazing people and have had nothing but fun.  According to the wife we are in our happy place and I couldn’t agree more.  From day one we have enjoyed every minute of it and the pace has been nice and slow.  I already feel like I have been here for a month and I can’t wait to do this again next year.

We got down here last Saturday with a crappy down pour and a ton of traffic.  Not the start we were looking for.  We did however get to the house around three unpacked and got settled in.  The cottage is small but feels like the perfect size.  We found it on Home Away last year ( Thanks Paula for opening your home to people).  The best part is that it is less than two houses off the beach, and just two houses down from where I proposed to the wife in nearly 12 years ago.

Sunday the wifes grandparents came down.  They rented places in Dewey for more than IMG_2919.JPG30 years.  A few years ago it got to be a bit to much for their advancing age and ended the tradition.  My wife was hell bent on starting that back up and this is the first year we were able to do it.  So we invited them down for a few days so they could enjoy it with us.  It was perfect and we all had the time of our lives.

The Neighbors have a 6 year old that has been playing wonderfully with the kids and almost eliminated any boredom for the children.  This is huge because as you all know kids can get bored at the greatest places ever.  We hate to see them go on Sunday.

Most days have been spent on the beach but there were two nights where we changed up things a bit.  On Thursday night we took a Sunset cruise on a friends boat to Paradise Grill in Long Neck.  We took the boat from Dewey over to Paradise docked up and had a great night.  We came back home around midnight with the kids fast asleep on the boat.  They have been worn out every night this week.

Friday night we went out on to the beach around 830 pm and had ourselves a bonfire.  If you have never experienced a fire on the beach at night there is nothing like it.  The neighbors came down with their kid and their friends kids  and we all had s’mores and just relaxed.  They left a little early so it was just the family sitting there and enjoying the night.  This was probably one of the most relaxing things I have ever done.  We just sat and talked about the week we already had and then we just watched the girls play.  I don’t even think they know the memories they are making.  The wife and I remind each other all the time on how precious these moments are.


Getting the permit for the fire was easy two just go down to the Dewey Beach Town Hall fill out a piece of paper and put down the deposit of $150 bucks.  If you don’t leave a mess than you will get a $100 back.

I love Dewey and can’t wait to see what happens during week two.  I highly suggest anyone just to come expereince it for a weekend.  You won’t be dissapointed.

 

DOW (Drinks of the Week)

Holy Shit I had a lot of drinks this week.  From Orange crushes, Jameson and Ginger, to St. Bernarbus Wit, and Brother Thelonious.  A battle of the holy beers, with St. Bernarbus Wit easily coming out on top.  That was a damn good beer.  I’ll try to list all of them in some order but there is a good chance I am going to screw this post up.  The biggest reason is that I am drinking now so we will just go with whatever my fat ass hands can type.

I came into this week having picked up two beers that I would try but being on vacation I clearly have had far more than that.  Shock Top and Cage Radler have been my go to beers so far.  Two easy drinking summer beers.  These are the guys I would knock down while relaxing on the screened in porch here at the rental just talking about how relaxing this is and that we will make it an annual tradition.

Brother Thelonious and St. Bernarbus we two very different beers with the St. Bernarbus coming out on top.  This was a sweet beer and I think that it just fit in a bit better for the setting I was in.  I don’t match my beers with my food but with the good times I am having.  Summer brings out more of the sweeter beers like the Wits.  So in good fashion I will be picking this one up again.  I highly suggest it ro all.

Enjoying Dewey is easy all you have to do is show up and a party is going to break out. Each turn you take there is a place that is offering great drinks and great times.  This week there have been five places that I have enjoyed and I think you will all enjoy them as well.

#1.  This is a no brainer and most reading this are going to say no shit but The Starboard  is one of the greatest bars ever created by the beach gods.  I don’t believe this was built by man it is to mythical and to amazing to have been the creation of a mere mortal.

#2.  Listen if you want to relax, people watch, and enjoy some amazing beers you have to stop into the Dewey Beer Company.  I had three beers from there and bought up some swag, the buzz forced me to do it.  The beers in ranking order from Dewey Beer Company would be #1 Citra Wit #2 Social Kolsch #3 Summer Saison.  All awesome beers.

#3  Que Pasa offers some amazing outdoor seating where kids can go and play and you can eat some awesome wings, or the Mussels with Chorizo.  I enjoyed a wonderful Day Blazer and just chilled.

#4 Surf Side Bar  is a great pit stop for some good drinks and fun times.  On a walk from Dewey Town Hall I popped in just to grab a Sam’s Summer Ale to take the heat off.  They look small from the outside but the bar is deep and the good times are even deeper.

#5  Paradise Grill is off the charts fun.  Look this place is huge, has the best atmosphere for the family.  This place is bayside so it will either take a bit of a drive to get there, or my preferred method a night boat trip where you can dock at the place.  They have plenty of beers decent food and some good bands that play.

This week is slowing down and we are preparing to head into week #2 of this vacation.  Sunday you can catch me day drinking at the The Star Board stop in grab a selfie and a beer.

Relax It’s Sunday

Well it was a another great week and we had some good times.  I don’t normally like to rush time but this week we leave for a two-week vaca to Dewey Beach.  If you know me at all you know I love the beach.  The biggest part of this week was that I had the fortune to take a three-day trip to Niantic, Connecticut this week also.  This is a great little bay town with good food and great people.

The week moved slow in the beginning but has quickly picked up speed as we get closer to our family vacation in Dewey Beach, Delaware.  If you have never been there it is one of the best social beach areas on the east coast.  If you love the beach night life this is the place to go.  There are multiple places to go to have a great time such as  The StarboardBottle and CorkDewey Beer Co. , and the Light House  just name a few.  You will find me at almost every one of those over the next two weeks.  Especially the Starboard on Sunday for Bloody Mary’s.  You if happen to find us down there stop for a drink and a story.

My Three day trip to Niantic was awesome.  There are a few establishments in both Niantic and New London that are fun and have good eats and drinks.  I would start off byIMG_2831 trying The Black Sheep Public House for a drink, a conversation, and some good eats.  After you stop there head out and just enjoy walking around town and getting to know people.  When we stopped in at the Black Shdep we got to talking to bartender and found out that she attended the University Delaware.  I have partied in that town a million times.  The planet is really small when you just stop and talk to people.  While we are hanging out down in Dewey the wife and I get to plan our long weekend in Hollywood Florida in August.  I can’t wait.

Relax It’s Sunday

Who had a great week this week, THIS GUY!!!  It is hard for me to complain about any week that I have.  It’s not that I am doing anything crazy I, believe that I really only hold onto the positives and ignore the negatives of things that happen.  The work week was short coming off of the holiday weekend that also was excellent.  Tuesday Night we sat and watch fire works from DP’s backyard.  We cooked out and relaxed and enjoyed the night.  Middletown put on a great fire works display.  The three days of work went quickly and rolled right into another great Saturday.

Saturday brought us another great day on the beach where we hung out with some great people and even got to meet some new ones.  It is great to go to the drive on beach and fish, drink, and cookout.  The kids all get together and dig for sand crabs, catch jelly fish, and just have a blast.  My youngest couldn’t stop singing Moana Songs and playing in the waves.

The group was close to 25 deep not inlcuding the kids.  There was cornhole, fishing, laughs, good times, and everything else that comes with a day on the beach.  I was throwing down some Cage Radler Victory Beers that just made everything better.  The best is that we all agree to do so many things with each other that we know only about 2% of it will happen.  You know we agree to by boats, and beach houses, and party like this all the time.

The best is when it’s time to pack up.  Oh the fight that this has become.  The kids and the wife never want to leave.  Deep down neither do I, problem is that I know I have to drive home.  F me right.  So there I am the bad guy for having to pack up and make us go.  Trust me my inner child crying an ocean of tears.  Once off the beach it was time to hit up WAWA grabs drinks and sandwiches for the long haul home.  I weep the whole way back.  Once home it is tubbies for everyone, one last drink on the deck, and night night time.

Sunday we went to Cantwells Tavern for brunch.  The is a great place within a historic town.  The brunch is awesome there and the Bloody Mary Bar is excellent.  Following that it is off to the community pool for sun and fun.  I would much rather be a the beach though.

I am convinced now that I want to get a place at the beach.  Nothing to extravagant just somewhere that I can lay my head down and the kids will have fun hanging out with other kids.  I hate having to drive back an hour from the beach.  Hour down and an hour back kinda sucks.  I think we will start looking this fall for something in the future.  If anyone has any recommendations let me know.

DOW (Drinks of the Week)

I was able to enjoy some new beers this past week.  I found my self in an area where a IMG_3624brewery just so happened to be.  We gathered up some fellow travelers and headed over to Troegs in Pennsylvania.  What an awesome place to go and enjoy some brews.  You can sit outside and enjoy some great views or go inside where there is plenty of space and they have created an environment that makes you want to socialize.  Besides the beer the food was awesome also.

I started with placing my food order, pork belly with jalapeno baked beans and french fries with spicy ketchup.  Holy shit this was good, plus the portions are just the right size.  The pork belly come in a small cast iron pan sitting on top of the baked beans.  If you have never had pork belly it is basically bacon on steroids.  If you don’t like beer, which is just Un-American, then go and enjoy the food.

So my food was ordered and it was time to order my drinks.  Anytime I go to a new place IMG_3613I look for a sampler of flights.  Troegs offered a summer anthology mix which consisted of there Perpetual IPA, Sunshine Pils, Crimson Pils, and Scratch a Raspberry Gose.   The was bartender suggested to drink it in reverse order from how it is listed.  Good call on his part.  The best of the four for myself was the Sunshine Pils.  The Sunshine has good flavor and is on the lighter side.  With a lower ABV of 4.5 you could definitely stock the garage fridge with this one.  Although I really like the Sunshine Pils my favorite beer of the night was the Cultivator Helles Bock.  This one quickly became the fan favorite as we all sat around talking about the good times we have had in years past.  This was that beer that keeps the conversation going.  By far the best beer I had this week.

Rounding out the week we finished off with a Einstok Icelandic Beer.  After a few of these I felt like a Norse God.  I conquered and laid claim to my neighbor’s yard.  I am not sure if they are going to like the fact that I have pillaged lawn furniture and killed a yard IMG_3647gnome, but of screw it I am basically THOR now.  This beer was surprisingly smooth and had good flavor.  I suggest picking it up and giving it a try, plus the whole viking thing is fun.

Never Drink alone and everyone wants to be a viking until it’s time to do viking shit.

Pit Barrel Smoker

Once again we are using a product from a veteran owned company.  The Pit Barrel Smoker is an awesome product.  This is a black drum that you can hang your selected meat and cook to your hearts desire.  The barrel comes ready to cook, using Kingsford coals, and the oxygen intake (not sure if that is the correct terminology) is preset to the elevation of where you live.  The only things I purchased, which you can also get on their website, is a chimney, wireless thermometer, and gloves that could handle the heat.  This thing literally takes five minutes to set up.  That is the truth, and if you are a novice smoker, this barrel is for you.  I personally have never owned a smoker before.  I do a ton of cooking but this was one of the items that had eluded me for some time.

As I stated before I am new to the smoke game, I can’t talk about other smokers and their performance but this barrel of smoke love is just right for me.  The only thing that I have had to do is adjust the lid from time to time to get the temperature to raise to the level I need.  This take all of two seconds of effort.  I did discover this while cooking a pork shoulder that I couldn’t get above 150.  It just needed a little more oxygen and bam she gets to cooking.

The Pit Barrel was recommended to me by a good friend, the wife got it for me on my birthday.  I will admit she was a bit hesitant that it wouldn’t get used much especially during the winter months.  Well she couldn’t have been more wrong, all I did was move it to the garage threw open the door, grab a chair and a beer, and cooked away.  The added benefit is that my garage smells like a smoke house with a hint of man, and motor oil.  When I added in the beer fridge, and a small heater that attached to my propane tank my life felt near completion.

Prime Rib – OMG this is the best thing I have cooked so far Amazing

Pork Shoulder – Smoked Pulled Pork is a great comfort food and very flavorful

Brats – You can hang like 30 of these things in there, and they don’t take long to cook.

Ribs – Who the hell doesn’t like ribs ( I prefer dry rub on mine)

Deer roast – This was the first thing I did, surprisingly good.

Once again give this a try, especially if it is your first smoker.  The added benefit is you will support a veteran owned business.

Shrimp Alfredo Bake

This week my oldest had a bit of a fever so we couldn’t really head out much.  Instead we cooked.  First we made brownies, she wanted to surprise her mother, it worked.  Then I convinced her to help me cook an amazing pasta dish.  I can’t tell you how much I love cooking with my kids.  This one was really fun because she got to help a lot.  I will put the link at the bottom of this page for the recipe that I used.

Ingredients:

Penne Pasta – Try and use about ten oz.

3 tbsp. Butter

3 Cloves of Garlic – you’ll need to mince this – use fresh garlic not the stuff in the bottle.

1 lb of Shrimp Raw – Medium or large. (Peeled and deveined)  Scallops would also be a good addition, if you do that cut down on the shrimp to about a half a pound.

3 tbsp. chopped Fresh Parsley

2 tbsp. all-purpose flour

3/4 cup of milk (whole milk, if you use cream it may be to thick, stay with the milk)

1/4 cup of chicken broth, ( the below link calls for low sodium, I like the flavor though – your choose your blood pressure)

1 cup shredded Mozzarella – try not to eat all of it while your cooking.

1/4 cup Shredded Parmesan – set aside an additional 2 tablespoons or more

2 large tomatoes chopped – you could probably get away with one, it depends on how much you like tomatoes.

Fresh ground pepper, and salt, this is to taste more than anything.

1 large frying pan, that can be put into the oven.  Please for the love of god put back the pan with the rubber handle, that’s not going to work.  If you have a baking dish pull that out.  You can make everything in the frying pan transfer it to an 8 x dish and use that to finish off in the oven.  Oven you say, yes the oven.  Just keep reading below and you’ll see.

Directions:

This is the fun part.  First get all your measurements set aside, and everything prepped ahead of time.  Some steps in this involve good timing and you don’t want to burn anything.  It helps if someone is cooking with you, one because you should never cook alone, but the extra hands help.

1st – Take a table-spoon of butter put it in the frying pan along with the minced garlic shrimp, and a tablespoon of parsley.   Off to the Side make sure you have your pasta heating up.  Also pre-heat your oven to 350.

2nd – Once the shrimp have turned pink on both sides, remove the shrimp.  There should be plenty of juice cooking in the pan still.  You’ll need this.

3rd – Remember I said timing and the extra hands would help, this is one of the steps that takes place.  Place the rest of your butter into the frying pan, once melted you need to add your flour.  This is how you make your roux, or the base for your white sauce.  You may not need all of the flour, add it in to the melted butter and whisk away.  It will begin to clump, don’t let it turn brown.  Once all the butter has disappeared add in the milk, and then the broth.  Keep stirring it will begin to thicken. (this may take some practice if you have never done it before)

4th – At this point you can add in 3/4 cup of your mozzarella and 1/4 cup of the parm.  This will also help if thicken up.  Then add your tomatoes, pasta, and some more parsley.  Also salt and pepper to taste.  Make sure you save some mozzarella, parm, and parsley for the end.

5th – Take that frying pan and place it in the oven.  Let the pasta bake for about 8 minutes.  Keep an eye on it, each oven seems to have its own personality.  Mine tends to cook slower.  It’s stubborn.

Lastly – Take out the pasta and let it rest for a couple of minutes finish it off with a little mozzarella, parm, and parsley.  The fresh melted cheese and parsley will make it look amazing.  Grab a fork and start digging in.

My oldest and I had a blast making this dish, extremely fun and tastes great.  Remember never cook alone.

Relax It’s Sunday

I don’ t seem to have a lot for this week.  The week was pretty quiet for the most part.  Hold on a sec………. Sorry my two-year old thought that it was the perfect time to have a melt down about brushing her teeth.  Well  I guess it’s the Crib for you.  I can do that because I am a man, and adult.  I mean I feel a little bad, wait no f$^# that noise.  I know I know, I will grab her in a minute, these girls will be the death of me.  Anyway back to this week. Hurricane Matthew seems to have taken a path away from the northeast which is awesome, we got our butts kick in youth football, and I made some awesome food this week.  Best part is I am sitting and having a Miller Lite and getting ready to watch some football.  I love Sundays, we sat down as a family this morning and had a big breakfast, turkey bacon, scrapple, pancakes, crepes, and a little scrambled eggs.

I did feel terrible yesterday, my girls have had high fevers this week which lead me to cancelling on two events.  This first was a house-warming for my cousin, so proud he finally got his own place.  The second was DP Killas’ son’s birthday party.  I hate missing anything that involves DP Killa’s son or Sean’s Girls.  Sucks.  So the fevers may have caused us to stay in but we made brownies, and awesome pasta dish,img_5179 and the Stuffed Pepper Soup in the crock pot now.  My oldest help me make everything.  I could spend all day in the kitchen.
I look forward to the upcoming week, I got the Selfie King IPA release on the 15th of October, Pumpkin picking next week, lunch with the Selfie King on Thursday, and hopefully some new beers.  The Eagles are looking good and should pull down another win this week.  I hope everyone else has a great week.

DOW (Drinks of the Week)

I had a lot to drink this week.  On Friday I enjoyed to many elixirs.  It was a birthday celebration so I don’t care.  My only word of advice is that you shouldn’t mix the following items together if you are over thirty, beer, white Russians, cheese steaks, hoagie, chocolate cake, meat sticks, and cheese. This would cause me to be disappointed in myself the next morning.  Light weight! Either way I got to enjoy a wide variety of drinks this week.

This first beer that I had this week was at the Independence Beer Garden in Philadelphia.  The Beer was Nodding Head Monkey Knife Fight.KNife Fight.PNG  The beer was great for the day because of its herby spiced flavor, and the summer heat, mixed with the outdoor seating the IBG offers was awesome.  It really helped me to relax and take in the scenery that IBG offers.  This beer was labeled as a lager on the menu but didn’t have the classic lager taste at all.  It was really good though.

The Second Beer that I was happy to enjoy was called American Hero Ale, from Liquid Hero Brewing.  I was at the Reading Terminal Market and stopped at Molly Malloys and had this fine ale.  Dark color and rich flavor, this beer hit the spot.  I think I got a little caught up in the moment though.  Molly Malloy’s is an open bar in the middle of a giant grocery store, yet somehow makes you feel like your sitting in a pub just people watching.  As I sat there Molloy Malloy's American Hero Aleenjoying my ale time seemingly just slowed for a moment.  Great beer great place.

While sitting at DP Killa’s house we threw down a ton of drinks.  It was his birthday so no excuse needed.  He broke out Stewart’s 20th Anniversary Beer.  Delicious, that’s all I have to say.  Stewarts is a small brewery in Delaware that has been around for some time.  They were the awesome craft beer in Delaware before it got trendy.  These guys have been killing it for a long time.  We would finish the night off with drinking White Russians.  I had about three of these before I had to throw the towel in and fall asleep on his living room floor. I had enough, the night was finally over.  Bring on the headache.   IMG_4998[2543190]

I suggest heading out and grabbing some of the above brews or visit a pub and enjoy today especially if you can find a place to drink outside.  A few suggestions would be, The Crooked Hammock in Lewes, DE, Brick Works in Smyrna, Canwells in Odessa, De.   I look forward to this week since the NFL will be kicking off and I will be a the Eagles home opener.  Great time to take and try some new Beers.
